Front of house is where guests judge you. Back of house is where most of the real risk sits. Your kitchen packs heat, sharp edges, hot oil, gas, powerful machinery, wet floors and chemicals into a small space, then adds people moving fast through a breakfast rush. Get the basics right and it runs safely for years. Let them drift and the same room can hurt someone badly, or shut your food operation down for a week.
This is a plain guide to the parts that most often get missed in hotels. None of it is exotic. It is mostly about noticing the everyday hazards your team has stopped seeing because they are so used to them.
Your kitchen and housekeeping teams handle degreasers, oven cleaners, sanitisers, descalers and dishwasher chemicals every shift. Several of them are corrosive, or give off fumes if they get mixed. It is tempting to think a quick word on someone's first day covers it. It does not.
What people actually need is to understand what each product does, how to use and store it safely, how much to use and how long to leave it, and what to do if it splashes. Keep the safety data sheets somewhere they can be found, make sure your written notes match the products you really buy, and look again whenever you switch to a new one. A different sanitiser at a different strength changes the picture. This does not have to be a classroom course, but it has to be more than "the blue one's for the floors".
Being able to tell a guest exactly what is in their food is not a courtesy, it is part of the job. You need accurate, available information on the major allergens in what you serve. Where you pack food up on site for people to grab themselves, a sandwich or a breakfast pot on a counter, it needs a label showing the food and a full ingredients list with the allergens clearly picked out. These are the rules many people know as Natasha's Law, and they are the ones that trip up hotels running a little deli fridge or a coffee-to-go counter next to the restaurant.
Then there is keeping allergens apart in the kitchen itself, what the food world calls cross-contact: an allergen moving from one food to another on a shared board, a wiped-but-not-washed knife, a common fryer, or a scoop passed between tubs. During a busy service, with an agency chef or a seasonal starter on their first live shift, that is exactly where a slip happens. Clear routines, separate kit where you can manage it, and real training are what hold the line.
Wet, greasy floors are one of the most reliable ways to hurt a kitchen worker. The instinct is to hand out non-slip shoes and call it done. Better to work the other way round. Start with flooring that suits a wet kitchen, then get on top of the spills, water, oil and food debris, and back that with a cleaning routine that lifts the grease without leaving the floor wet and slick behind it. The right shoes help, but they are the last layer, not the first. Sort the floor and the spills, and the shoes are doing far less of the work.
Deliveries, sacks of veg, catering packs, kegs and bin runs mean a lot of lifting and carrying, and most back injuries build up quietly rather than in one dramatic moment. The order that actually prevents them is this: first see whether the heavy lift can be avoided at all, then look at how to make what is left easier, a trolley or a sack truck, splitting a load, storing heavy things at waist height, arranging deliveries so nobody is carrying kegs down a step. Good lifting technique matters, but it comes at the end of that list. If your only control is telling people to "lift with your knees", you have skipped the steps that do the real work.
Commercial catering gas is not something to take on trust. Work on appliances and pipework must be completed by a Gas Safe registered engineer qualified for commercial catering. Appliances and associated safety controls should be inspected and serviced at intervals set by the manufacturer and competent engineer; annual servicing is common in commercial kitchens. Any interlock that shuts off the gas when extraction fails must not be bypassed.
Machinery, your mixers, slicers and food processors, needs to be in good working order and used only by people who have been shown how. Blades and moving parts need their guards, and before anyone cleans a machine or clears a jam it has to be switched off and isolated so it cannot start with a hand inside it. That single habit prevents some of the worst injuries in any kitchen.
Hot oil, work at height and extraction also need deliberate controls. Fryers require safe filling, filtering and disposal arrangements, and full pans of hot oil should not be carried through a crowded kitchen. Suitable steps should be available for high storage or cleaning instead of staff using chairs or unstable equipment. Extraction canopies, filters and ductwork need inspection and cleaning at a frequency based on their use because grease deposits can significantly increase the severity and spread of a kitchen fire.
